Here’s a simple pad thai recipe for you:
Ingredients:
• 8 oz rice noodles
• 2 tbsp vegetable oil
• 2 cloves garlic, minced
• 1 shallot, finely chopped
• 2 eggs, lightly beaten
• 1 cup tofu, diced
• 1 cup shrimp or chicken (optional)
• 2 cups bean sprouts
• 1/4 cup crushed peanuts
• 2 green onions, chopped
• Lime wedges (for serving)
• Chopped cilantro (for garnish)
For the sauce:
• 3 tbsp soy sauce
• 2 tbsp fish sauce
• 2 tbsp tamarind paste
• 2 tbsp brown sugar
• 1 tsp chili paste (adjust to taste)
Instructions:
1. Soak rice noodles in warm water for about 30 minutes until they are soft. Drain and set aside.
2. In a small bowl, mix together all the ingredients for the sauce and set aside.
3. Heat vegetable oil in a large skillet or wok over medium-high heat. Add garlic and shallot, and sauté until fragrant.
4. Push the garlic and shallot to one side of the skillet, then add the beaten eggs to the other side. Scramble the eggs until cooked, then mix them with the garlic and shallot.
5. Add tofu and shrimp or chicken (if using) to the skillet, and cook until they are cooked through.
6. Add the drained noodles to the skillet, followed by the prepared sauce. Toss everything together until well combined and heated through.
7. Add bean sprouts and toss for another minute.
8. Remove from heat and sprinkle with crushed peanuts and chopped green onions.
9. Serve hot with lime wedges on the side for squeezing over the pad thai, and garnish with chopped cilantro if desired.
