INGREDIENTS
1 cup of Shrimp or 2 medium sized chicken breasts, thinly sliced or a combination of both
1 egg
A handful each of bean sprouts, onions and match stick peppers and carrots
2 portions of wide rice noodles (for Pad Thai) cooked according to packet instructions
A wedge of lime
Handful of crush peanuts and spring onions to garnish
1 jar of Blue Dragon Pad Thai cooking sauce
INSTRUCTIONS
In a wok or large frying pan, heat 1 tablespoon of oil and stir fry your meat or shrimp until just cooked
Make a hole in the pan and crack an egg into the pan scramble this up with the meat.
Add vegetables and sauce and cook for another minute
Toss in cooked rice noodles. Garnish with spring onions, crushed peanuts and a squeeze of lime.
